Ingredients
- 1/2 a sweet onion, diced
- 2 tbsp minced garlic
- 2 tbsp olive oil
- 1/2 bag of fresh baby spinach
- 1 can of Great Northern beans or your bean of choice
- 1 can of crushed tomatoes (I used fire-roasted for added flavor)
- 1 box of vegetable broth
- Refill that box with water
- 2 tbsp of Mrs dash
- 2 tbsp of onion powder
- 2 tbsp of garlic powder
- pepper to taste
- 1 bag of frozen vegetables (I used a California medley)
- 1 bag of frozen tortellini pasta
- Shredded cheese (Optional garnish)
Preparation
- Sauté onions and garlic in olive oil until onions are translucent. Pour in the baby spinach ( don’t drop the bag in like I did 🤣). Stir till spinach is wilted.
- Add in the can of tomatoes 🥫
- Add in the can of beans
- Add in vegetable broth
- Fill up the vegetable broth box with water and pour in.
- Add in seasonings
- Add frozen vegetables
- Let everything come to a boil.
- Add in tortellini and put soup on medium heat.
- Serve with shredded cheese if desire
